BRAZILIAN-STYLE barbecues are tempting many diners at Churrasco Caringbah.
The restaurant uses fresh ingredients cooked on an open flame in a unique style that originated in Brazil.
The extensive menu includes various meats, vegetables and salads, and special dishes for children.
Before cooking, the meat is rubbed with salt and marinated — a process which adds flavour. Dishes include barbecued rump steak, with ginger and soy, chicken sausages and chargrilled chorizo.
Diners are showing a preference for pork served with green chilli and fresh herbs, and sirloin crusted with peppers and spices.
Extras include barbecued pineapple, deep-fried bananas and slow-roasted eggplant.
Diners have a choice of sauces at each table and a choice of salads such as rocket and parmesan and traditional black beans, a Brazilian rice dish, and antipasto.
A word of advice: leave room for one (or more) choices from the Churrasco desert menu, which includes banoffi tart made with banana and caramel.
