Sharks skipper Paul Gallen has been named at lock.
"I really love the All Stars concept and it's a massive honour to once again be selected to be a part of the week," Ennis said.
"The diversity and inclusion of this event is what makes it so special, not just for the players but the wider community and I'm glad that it's back on the calendar."
Dragons recruit prop George Rose has been selected in the Indigenous All Stars team.
Forward Trent Merrin, who is still to decide his playing future, as he is off contract at the Dragons at the end of 2015, said he was thrilled to be in the NRL All Stars line-up.
"I am absolutely rapt that I've got the privilege of playing in the All-Stars games," Merrin said.
"Coach Paul McGregor pulled me to the side and gave me the good news and the butterflies soon built up in me.
"It's a great chance for myself to play alongside and against some of the great players of the game."
