Shrove Tuesday marks the final day before the start of the Christian festival of Lent and the forty days leading up to Easter Sunday.
As it was the last day before Lent it was also a day to use up eggs, butters and other fats, which were forbidden during the Lenten fasting period.
Pancakes were a perfect way of using up these ingredients as the starch-based batter usually contained eggs and butter and was cooked on a hot surface with more oil or butter.

Ingredients:
- Half cup of self raising flour
- 2 teaspoons of cooking oil
- 1 tablespoon butter or margarine (melted)
- 2 eggs
- Three quarter cup of milk
Method:
- Sift flour into a bowl. Add eggs and oil. Mix well.
- Gradually add milk and melted butter or margarine while stirring. Mixture will be quite thin.
- Leave to stand in fridge until ready to cook - can be day before.
- Heat frypan.
- Pour in a small quantity of pancake mixture. It's not necessary to oil frypan because oils are included in the mixture.
- Cook on side until golden brown. Turn and brown the other side.
- Repeat cooking process until all mixture is used.
- Stack pancakes one on top of the other in a covered dish.
- When ready to serve they will still be soft and hot.
- Serve topped with lemon and sugar or golden syrup.
