Colin Fassnidge opens Banksia Bistro at the Banksia Hotel

Since selling his Surry Hills pub Four in Hand, Colin Fassnidge has missed pub life so much, he's opened a new suburban venue.

The My Kitchen Rules judge is now dishing up crab on toast and suckling pig sausage rolls at the just-open Banksia Bistro, in Banksia.

While Fassnidge's famed social media feuds with other chefs have spread far and wide, his food ventures have until now centred on Paddington and Surry Hills.

"Monarch Hotels has given us the kitchen at the Banksia Hotel, we'll hopefully bring more life to it and attract a new demographic with the food,” he said.

“It'll be exactly like the Four in Hand counter meals we used to do in Paddington.

"We'll have bigger menus on the weekends, we might do a suckling pig or a Sunday roast.

“The old carpet has been ripped up and the space given a bit of an overhaul," Fassnidge says.

The TV chef skirted rumours there are already plans for additional venues.

"We'll see how this one goes first," he says. Would he ever reboot in Paddington? "You never know."

Banksia Bistro is open daily for dinner; Fri-Sun for lunch.

It is located at 288 Princes Highway, Banksia.
