The team behind Barlow & Co, the popular Canterbury Foodies Market stall, has delivered on fan requests to see more of their awesome brisket burgers.
The slow-cooked sensations are now available at Barlow & Co’s new permanent home on William Street, Earlwood (formerly Mr Fish).
Barlow & Co’s Texan-style brisket burger is the signature dish of the new take-away burger store.
Texan’s love their brisket ‘‘cooked low and slow‘‘, and that’s exactly how Barlow & Co do it - cooking the meat for 16 hours until it’s succulent and falling apart.
Chef and owner Dean Barlow is following the trend of chefs who have opted to move out of large scale kitchens and find home in a smaller, family-focused venture, which happens to be up the road from his own home.
Starting small with a regular market stall at Canterbury’s Foodies Market, he soon developed a strong following at the market and had a ‘‘brisket brigade’’ visiting specifically to have his burgers.
Barlow decided to secure a permanent location after a spate of torrential rains and the markets organiser announcing a closure for several weeks due to The Australian Turf Club Quarantine period in the lead up to the Autumn Carnival.
The brisket burger is the signature dish but the affordable, varied menu also includes: fish or calamari and chips and a vegetarian burger and family snack pack options.
You can also go for a Sunday roast, conveniently loaded onto a burger which may soon become a new tradition for Earlwood locals.
