Sydney's expanding craft beer market had yet to reach the eastern side of the Shire when Andrew Orrell took the adventurous step of building a brewery at Caringbah to serve the local demand for quality craft beer. And so Hairyman Brewery opened in April 2016.
Today Mr Orrell, and his wife Joan O'Donnell, own and operate the business with the help of a number of part-time staff.
The brewery gets its name from the legend of the Wild Hairy Man of Botany Bay, who according to local history, roamed the area during settlement times.
"The brewery is a great place for a quiet beer with friends or you can pop in and sample our diverse range of premium craft locally produced beers," Mr Orrell said.
"It's also a great place to prepare for Sharks home games, with food trucks on site, plenty of street parking and only a short stroll to the stadium."
Mr Orrell said the brewery catered to the current trend away from volume to multi variety quality beers.

"Cottage manufacturing is making a comeback, as consumers seek out a unique and specifically local angle to their purchases, and in particular to their craft beer," he said.
Hairyman Brewery has nine beers on tap, eight of which also come in cans.
The range covers all tastes and includes Follet's Fable, Pacific Lager and Pop Ale Original, along with Cory's Claim Dark Ale, Gutsy Pale Ale and IXPA.
Lawsons Legend Pale Ale, Amburlesque and Murphy's mutiny are mid-strength offerings while the Salt Dog Gose is a salty wheat beer with coriander and pimento berry.
Hairyman is also a contract brewery for other brands that are either new to the market or don't have the capacity in their own brewery.
Mr Orrell said the brewery supported the community by sponsoring a range of events, including the recent Pipeline Cycling Challenge for homeless women and their children when the Hairyman team were the event's top fundraisers.
