Jensens Restaurant at Kareela has begun work on a major extension of its current premises.
The extension will consist of a white atrium out the front with bifold windows allowing natural air and light into the venue.
Brooke Jensen - Jensens Group co-owner and wife of Executive Chef Carl Jensen - said on Tuesday the extension will be an exciting evolution of the restaurant which opened in 2017.
''We can not believe that in just over two years we are already going through a major extension of Jensens,'' Brooke Jensen said.
''It feels like only yesterday that Carl and I were standing in the empty shell of Jensens about to embark on another restaurant journey.
"Today we stand in the dusty build of the new Jensens excited to see where the next part of our ride will take us."
Brooke said a major feature of the new Jensens will be the doubling of the existing bar onto the new side creating a large U shaped bar, with bar dining the whole way around.
"What used to be seen as the next best thing, being seated at the bar is now often the first preference for our customers," she said.
Another feature of the new extension will be a laneway for dark and intimate dining along the side wall and a private dining room called "The Cellar".
"The Cellar will be grand and luxurious with carpet floors, bespoke lighting, draped curtains, designer furniture and audio visual equipment,'' Brooke said.
Carl, who in 2005 fulfilled his dream of opening the 'ultimate beachside restaurant' when Summer Salt was opened in the Elouera Surf Club, said construction at Jensens will continue for the next two months.
''Our loyal customers have allowed us to continue our dream and create the biggest restaurant in the shire," Carl said.
Jensens will remain open throughout most of the build process but will need to close from September 2 to 12 for the major works to be completed.
The doors to the new extension are expected to open in October this year.
