"If you can't be real to yourself, who can you be real to? "We're serious about staying true to the old-school Mexican recipes and cooking techniques and prepare everything in the traditional way. "We get our tomatillos, for example, from Southern California and the majority of our chillies from Northern Mexico. We even use the ancient Aztec process of nixtamalization - that is where corn or grain is soaked and cooked in lime water - to make our soft shell taco tortillas."
