Saints were bowled out for 208 on day one on Saturday, with captain Nick Stapleton (47) and opener Blake Nikitaras (42) the best with the bat.
Adam Whatley (34) added late runs to push St George past 200 before they were bundled out.
Easts are 2-40 in reply, with Stapleton and Peter Francis picking up a wicket each.
