St Greg's big forwards were instrumental early, powering up the middle on the back of strong carries and quick play-the-balls.
Illawarra scored the first two tries before St Greg's halfback James Perlowski spotted an opening and backed his pace, scoring a long-range try five minutes before half-time.
That was quickly followed by a try close to the line by hooker Jaydon Sienkiewicz.
Centre Lalotoa Mata'afa converted one of the tries and led at half-time 10-8.
Christopher Debrincat and Ashleigh Nisbet scored second half tries. St Greg's fans helped get them home by being extremely vocal.
The GIO "Most Trusted" man of the match award went to St Greg's lock Mark McCormack.
"All the other forwards get a great roll on and get quick play the balls for me so I can take it up the middle in the later part of the sets," McCormack said after the match.
"It makes my job a lot easier going up through the middle."
