ELIZABETH Susnjara knows how to put on a spread.
The founder of Sutherland Shire-based High On Tea had been working in the food industry for a few years when her family urged her to start her own business.
With a love of delicate nibbles and finger foods, Mrs Susnjara knew that the ideal business would be one with a high tea focus.
High On Tea comes to the client and brings everything a fancy tea party needs: crockery, tablecloth, glassware, and centrepieces.
‘‘I wanted to be a little bit different,’’ said Mrs Susnjara.
‘‘I walk in with everything.’’
Sandwiches include poached chicken, while one of the most popular desserts is Eton mess — a very light berry concoction that always leaves guests with a smile.
Mrs Susnjara’s speciality is the Croatian kifle, a crescent-shaped shortbread biscuit.
The popular biscuit is filled with a light, paste-like jam and it looks as good as it tastes.
Her tea parties are suitable for up 20 guests, but don’t expect a latte with your food.
‘‘I don’t do coffee — it’s all about the tea,’’ she said.
