SOME things are so good you simply cannot take them off the menu.
At Kalevu Restaurant at Sylvania that something is the twice-cooked duck.
"We change the menu every eight-to-10 weeks, but the duck is so popular it stays on the menu all the time and we just change the garnish," said owner Luc Dumoulin.
The duck is served with an orange glaze, spinach rosti and baby beetroot ($33).
Kalevu is modern Australian dining with Italian influences.
The menu is very imaginative and uses only the freshest of ingredients.
"We have a very young and energetic team and I love their enthusiasm," Mr Dumoulin said.
Dishes on offer include the crumbed lamb cutlets for entree, served with honey-gorgonzola sauce and sauteed snow pea puree ($21).
The herb-crusted barramundi is served with pumpkin puree, crispy enoki and sauteed oyster mushroom ($33).
For something sweet, try the white chocolate brulee with hazelnut gelato and raspberries ($18).
"We take the food to that special quality," Mr Dumoulin said.

On Tuesdays, patrons can select any two courses for $45, and will have corkage waived.
Be there on Wednesdays for a $24 seafood special or two courses for $45.
If you get in before 6.30pm on a Thursday, you will receive a free dessert.
